Cookies N’ Creme S’mores Cookies {gf, df}

Oh yes— you heard that right; cookies n’ creme s’mores cookies. These started as cookies and cream cookies, but lately I feel like mini marshmallows belong in everything. Anyone else? They’re the perfect balance of sweet and salty— packed with mini marshallows, chocolate and vanilla creme cookies, dairy free white chocolate chips, oat flour, buckwheat flour, vegan butter, free range eggs, vanilla, and baking soda. Plus, they’re lightly sweetened with pure maple syrup. This is one of my favorite recipes because it uses pretty minimal ingredients and only takes 15 minutes total. You’re gonna love these!


 
 

RECIPE

Prep time: 7 minutes

Bake time: 8 minutes

Serving size: 16 cookies


INGREDIENTS

1c gf oat flour {sub gf all purpose}

1 free range egg 1/3c buckwheat flour

1/3c pure maple syrup

1/3c melted vegan butter {sub coconut oil}

1tsp pure vanilla

1tsp baking soda

6-8 Trader Joes GF Chocolate Vanilla Creme Cookies

1/4c Dandies Vegan Mini Marshmallows

1/4c Great Value Organic White Chocolate Chips

sprinkle of pink salt

METHOD

1. Preheat oven to 350 F and line a baking sheet with parchment paper or baking mat.

2. In a large bowl, add all wet ingredients and whisk.

3. Once mixed well, fold in the flour and baking soda. Mix well.

4. Fold in mini marshmallows, white chocolate, and crushed up oreo cookies.

5. Gently mix until the mix ins are evenly distributed throughout the dough.

6. Use a cookie scoop to form cookie dough balls and transfer to prepped baking sheet. {I space them out 8 on each sheet}

7. Add a sprinkle of pink salt and bake for 8-9 minutes.

8. Let cool for 5-10 minutes before removing from the baking sheet. Enjoy!
