Be prepared to fall in love... these cookies are a hit. I really wanted to throw together a vegan chocolate chip cookie recipe, and that’s exactly how it went! Like exactly— I threw things in a bowl hoping something good would come out, and luckily it did. I love how crispy these cookies are, with still being chewy in the inside. I find these to be perfect for homemade ice cream sandwiches. They’re filled with minimal ingredients, such as oat flour, cashew butter, pure maple syrup, a little organic coconut sugar, flaxseed meal, and more. They're super easy to make, along with vegan, gluten free, and refined sugar free.
RECIPE
Prep time: 7 minutes
Bake time: 10-12 minutes
Serving size: 12 cookies
INGREDIENTS
1c + 1tbs oat flour
2tbs flaxseed meal
2tbs pure maple syrup + 3tbs coconut sugar
2tbs cashew butter {I use @georgiagrinders— code wellnesswithmak: 20% off}
1/4c coconut oil
1tbs nut milk
1tsp baking soda
1tsp Madagascar vanilla
1/4c dairy free dark chocolate chips
flakey sea salt
METHOD
1. Preheat oven to 350° F and line a baking sheet with parchment paper.
2. In a large bowl add all ingredients, besides chocolate.
3. Mix until smooth. Add a little extra nut milk if not moist enough, then fold in the chocolate chips.
4. Roll into balls and transfer to the prepped baking sheet.
5. Use a spatula to flatten the cookies a bit, sprinkle with flakey sea salt, and bake for 10-12 minutes or until golden brown on the edges.
6. Let cool for 15 minutes.
7. Grab your fave ice cream, slap in between the cookies, and enjoy your sammy!
