Vanilla Shortbread Cookie Granola {gf,v,rsf}

Holiday granola recipes? Of course. There are so many ways to spice up granola, and if you have noticed from all my other granola recipes, I love granola! This flavor is one of my favorites because it tastes just like the classic shortbread christmas cookies. It's loaded with some of my fave staples, such as oats, almonds, cashews, almond butter, seeds, pure vanilla, pure maple syrup, and even gluten free pretzels for an extra crunch. Not only is this granola loaded with nutrient dense ingredients and tastes delicious, but it's extremely easy to make; done baking in under 25 minutes! Not to mention, this recipe is gluten free, vegan, and refined sugar free. It's a must have!

 
 

RECIPE

Prep time: 15 minutes

Bake time: 22 minutes

Serving size: 12


INGREDIENTS

1c gluten free rolled oats

1/2c gluten free quick oats

1/2c crushed Trader Joe's gluten free pretzels

1/2c cashews + almonds

1/4c coconut flakes

1tbs hemp seeds + chia seeds

1tsp maca powder

1/4c pure maple syrup

3tbs creamy almond butter

2tbs melted coconut oil

1tsp pure vanilla

pink salt to taste


METHOD

1. Preheat oven to 350 F, and line a baking sheet with parchment paper or baking mat.

2. In a large bowl, mix all ingredients together.

3. Transfer to prepped baking sheet, spread out evenly, and press down forming one large sheet.

4. Bake for 22 minutes or until golden brown. Watch closely, as it will burn quickly! Enjoy!
