Wowww, where do I even start? This smoothie is exactly how is sounds: a pumpkin pie in a glass. The pumpkin flavor is so rich and the creaminess is on point. The frozen banana, along with the addition of the cashewgurt {I love Forager Project} definitely gives this smoothie that creaminess. I promise, this smoothie is guaranteed to give you all the fall vibes, regardless of what season it is honestly! Just look at the photo below~ you'll see why.
RECIPE
Prep time: 5 minutes
INGREDIENTS
1/4c organic pumpkin puree {not filling} 1/2 frozen banana 2tbs dairy free plain yogurt {I used Forager Project cashewgurt} 1 date 2 tbs gluten free quick oats {for texture} 3 large pecans 1tbs coconut flakes 1/2 cup unsweetened coconut milk
Cinnamon & pumpkin pie spice {to taste}
METHOD
1. Blend all ingredients, transfer to glass, and top with coconut flakes, granola, and a sprinkle of pumpkin pie spice.
