Tahini Spaghetti Squash and Cheez Bake {gf, v}

Yes, you heard that right- the tahini mac game just got a major upgrade. This spaghetti squash and cheez bake follows the same recipe as my tahini mac, but with a low-carb alternative to elbows or shells. The recipe is still entirely vegan, and is loaded with yummy goodness. For some greens and texture, I added some brussel sprouts and broccoli. This is such a fun way to enjoy "mac and cheese," and it's super easy to make; all you need it some time on your hands!


 
 

RECIPE

Prep time: 10 minutes

Cook time: 60 minutes

Serving size: 4


INGREDIENTS

1 large spaghetti squash

1/2c tahini

1/3c almond milk

2tbs olive oil + 2tbs coconut butter

1/3c nutritional yeast

2-3 cloves garlic

1/4c vegan cheddar cheese {optional}

3tbs water

1/4c Trader Joe's rice crumbs

2c brussel sprouts

1c broccoli

1/4tsp onion powder

Pink salt, black pepper, paprika to taste


METHOD

1. Preheat oven to 400° and prep a baking sheet two baking sheets.

2. Poke several holes in spaghetti squash and microwave for 2 minutes.

3. Remove from microwave, slice in half, and scoop out seeds.

4. Drizzle with avocado oil and a sprinkle of black pepper + pink salt & bake for 40-45 minutes.

5. Chop broccoli and brussel sprouts in half and lay on the baking sheet.

6. Drizzle with avocado oil, sprinkle with black pepper & pink salt, place next to the spaghetti squash, and bake for 15-20 minutes.

7. Blend tahini, garlic, onion powder, nutritional yeast, water, almond milk, olive oil, and half of the vegan cheese in food processor.

8. Remove brussel sprouts and broccoli from oven and set aside.

9. Once the spaghetti squash is done, scrape it out with a fork, and add to a square or rectangular baking dish.

10. Add in the veggies and the "cheese" mixing well.

11. Sprinkle the other half of vegan cheese on top, along with the rice crumbs, additional nutritional yeast, black pepper, and paprika.

12. Bake for 15 mins & turn to broil for the last 1-2 mins.

13. Once slightly golden brown, remove from oven & enjoy.
