Freezer Friendly Veggie Grain Bowl With Creamy Tahini 'Soy Sauce'

Another easy, sheet pan meal! I think my favorite kinds of dinners {besides my tahini mac} are loads of roasted veggies over rice. I love mixing up the veggies and adding different sauces. This recipe features my newest creation: Creamy Tahini 'Soy Sauce'. The sauce drizzle is so easy to make: all you need is tahini and coconut aminos! I love the sauce for it's flavor, but also it's creaminess. It adds the perfect amount of flavor to any dish, and definitely pairs perfectly with all veggies. You will see, this is a Trader Joe's heavy recipe, but most ingredients can be found elsewhere.


 
 

RECIPE

Prep time: 7 minutes

Cook time: 30 minutes

Total time: 37 minutes


INGREDIENTS

1tbs avocado oil

1 bag Trader Joes frozen brussel sprouts

1 bag Trader Joes frozen roasted corn

1 large sweet potato

2 frozen packets of Trader Joes wild rice

2 cups broccoli

2tbs Trader Joes tahini

2tbs coconut aminos

3tbs nutritional yeast

Pink salt, lemon pepper, Trader Joes mushroom & co. , red pepper flakes


METHOD

1. Preheat oven to 425 F.

2. Wash and chop all veggies {except sweet potato}, and add to a large bowl.

3. Use a fork to poke a few holes in the sweet potato and microwave for 1 minute.

4. Remove from microwave, chop, and add to the large bowl with the remainder of veggies.

5. Drizzle with olive oil and sprinkle with spices + nutritional yeast, then toss well.

6. Transfer veggies to baking sheet and bake for 30 minutes, flipping half way through.

7. While the veggies cook, prep the sauce by mixing coconut aminos and tahini in a small bowl. Add more of either if needed.

8. Once the veggies have 5 minutes remaining, microwave the frozen rice for 3 minutes.

9. Add the rice to a medium bowl, and remove veggies from oven.

10. To plate: add rice to the base, cover with veggies, and top with the tahini 'soy sauce' drizzle and nutritional yeast!
