Salted Chocolate Granola {gf/v}

Let me just start off by saying that god put my on this earth for granola. I am a granola girl at heart, whether it's on smoothie bowls, yogurt bowls, as breakfast cereal, or in most cases, right out of the mason jar. Not only do I enjoy eating granola, but it's one of my favorite kinds of recipes to develop. There's just something about creating different, mouthwatering granola recipes that screams my name. So, today's spin on homemade granola goes out to all my chocolate fans, and those who aren't afraid to kick start their day with a little chocolate. If you loved cocoa pebbles as much as I did as a kid, you're going to love this recipe. Making a batch is super simple and only requires one bowl. Per usual, this recipe is gluten free, refined sugar free, and vegan!



Prep Time: 10 minutes

Cook time: 25-27 minutes

Serving size: 8-10


1 1/2c GF rolled oats ⁣⁣⁣ 1/2c GF quick oats ⁣⁣⁣ 1/4c unsweetened cacao powder ⁣⁣⁣ 1/2c chopped pecans ⁣⁣⁣ 1/2c unsweetened coconut flakes ⁣⁣ 2tbs hemp seeds ⁣ 2tbs melted unrefined coconut oil⁣⁣⁣ 2tbs pure maple syrup ⁣⁣⁣ 2tbs date nectar ⁣⁣⁣ 1/4c flaxseed meal ⁣⁣⁣ 1tsp pure vanilla ⁣⁣⁣ 1/2c cacao nibs ⁣⁣⁣ 1/2tsp course Himalayan pink salt


1. Preheat oven to 325°.

2. Line baking sheet with parchment paper.

3. Mix all ingredients in a large bowl (besides cacao nibs) & transfer to baking sheet.

4. Press down to form one large sheet.

5. Sprinkle additional pink salt on top.

6. Bake for 25-27 mins.

7. Remove from oven and sprinkle cacao nibs on top.

8. Transfer to freezer to cool for 15 minutes.

9. Let cool before breaking apart into desired size clusters.
