Salmon Burgers {gf,df}

Talk about a summer night... these salmon burgers are perfect for warm nights out of the deck, with all the goods, of course! I love air fryer salmon, but sometimes you've got to change it up. These burgers are super juicy, and they're packed with nutrient dense ingredients, such Atlantic salmon, spinach, flaxseed meal, nutritional yeast, and tahini! I love throwing these over fresh greens and a side of sweet potato fries. For this recipe, I air fried the salmon first, then I made the patties, and finally baked them in a cast iron skillet. It may sound like a lot, but I promise it's worth it, and can all be thrown together in 35 minutes. These are gluten free and dairy free burgers!

INGREDIENTS
60z Fresh Atlantic Salmon
2c organic spinach
1tbs tahini
2 flax eggs {2tbs flaxseed meal + 6tbs water}
1tbs almond flour
2tbs nutritional yeast
juice from 1/2 lemon
1tsp Trader Joe's 21 Salute Seasoning
1/2tsp dried parsley + basil
1 1/2tsp garlic powder
Sprinkle of pink salt + black pepper
METHOD
1. Preheat air fryer to 360 F, and season the salmon fillets with pink salt and black pepper.
2. Air fry salmon fillets for 8 minutes and preheat your oven to 375 F.
3. Remove from air fryer and add to a large bowl.
4. Mash salmon with a fork until broken into ground salmon.
5. Make your flax eggs in a small bowl and let sit for 5 minutes.
6. Dice the spinach, and add the remainder of the ingredients to the bowl and mix well.
7. Add in the flax egg until well combined.
8. Spray your cast iron skillet with a little bit of avocado oil and heat in the oven for 5 minutes.
9. Remove skillet from oven and start to form your patties.
10. Once your patties are formed, place in skillet and bake for 20 minutes on the center rack.
11. Throw on broil for an additional 2 minutes to crisp the outside.
12. Remove from oven, add desired toppings, and enjoy!
