Raw S'mores Bars

Wow, if these don't scream summer nights, I don't know what does. These raw s'mores bars are loaded with amazing flavor, with a 3 layer combination. This recipe features Kodiak Cakes honey graham cracker bear bites {the healthier version of teddy grahams} to make the bottom crust layer. The middle is full with a combination of gooey dark chocolate, smooth almond butter, and coconut butter. Lastly, the top layer consists of melted vegan marshmallows with toasted marshmallows and crumbled honey bear bites on top! The bear bites are not vegan or gluten free, but they are made with 100% whole grains and 5g of protein. Besides the little bit of cane sugar in the bear bites, the rest of the recipe is refined sugar free, vegan, and gluten free. They are packed with wholesome ingredients, such as gluten free steel cut oats, raw honey, and pitted dates. Although these are three layer, they are fairly simple to make; there is no baking need, and these babies are stored in the freezer for the perfect sweet treat! You can bring s'mores indoors with these bars- you won't regret it!
RECIPE
Prep time: 45 minutes
Makes: 12 bars
INGREDIENTS
Graham cracker crust:
1 1/4c Kodiak Cakes honey bear bites
6 pitted dates
1/2c gluten free steel cut oats
2tbs coconut oil
1tbs raw honey
2tbs almond milk
Chocolate layer:
1/2c dairy free dark chocolate chips
1/4c creamy almond butter
1tbs coconut butter
1/2c almond flour
1/2c Kodiak Cakes chocolate bear bites {optional}*
Marshmallow layer:
2c vegan mini marshmallows + 3/4c for topping
1tbs coconut butter
1tbs water
2tbs crushed Kodiak Cakes honey bear bites
METHOD
1. Line a square dish with parchment paper.
2. Soak dates in warm water for 5 minutes.
3. Add all crust ingredients to food processor and blend until smooth. Stop often to scrape sides and continue blending.
4. Scoop from food processor and transfer to prepped square dish. Spread evenly and press down until flat and covering all corners.
5. Place the crust layer in the freezer for 15 minutes.
6. While that freezes, heat a medium saucepan over low heat with the coconut butter.
7. Add chocolate and almond butter and stir until fully melted and combined {about 5 minutes}.
8. Remove from heat and fold in the almond flour to stir. *Optional to blend Kodiak Cakes chocolate bear bites in the food processor until fine and add to the melted chocolate mixture.
9. Remove crust from freezer and add the chocolate mixture on top. Spread evenly.
10. Place back into the freezer for 15 minutes.
11. While that freezes, heat another saucepan with coconut butter.
12. Add in the marshmallows and 1tbs water, and melt on low heat until well combined and started to toast slightly. Don't keep on too long or it will become hard.
13. Remove from heat, set aside, and remove frozen layers from freezer.
14. Pour the marshmallow layer on top and spread evenly across the top.
15. Sprinkle additional marshmallows on top, along with crushed bear bites. I torched my marshmallows to make them toasted.
16. Place back into the freezer for an hour- over night. Remove from freezer to enjoy!
