Pumpkin Spice Maple Kettle Corn {v,gf}

Ahhh the pumpkin enthusiast and kettle corn lover in me is screaming. You too? That's what I thought. Your movie night just got 100x better. I love this popcorn because it's just right with combination of sweet and salty, and features the perfect dose of pumpkin spice to get your pumpkin fix in. This recipe is vegan and gluten free, and uses maple sugar as the sweetener. To make this popcorn simple, I suggest investing in a collapsible microwavable popcorn popper. It will change your life, I swear! I got my Proper Popper right off Amazon for only $9! Let's just say, it was the best investment I've been in a awhile.
RECIPE
Prep time: 2 minutes
Cook time: 3 minutes
Serving size: 4
INGREDIENTS
1/4c popcorn kernels
1/2tbs coconut butter + 1/2tbs coconut oil
1/2tsp pumpkin pie spice
1/4tsp pure vanilla
1/2tbs maple syrup
Pink salt {to taste}
METHOD
1. Mix popcorn kernels, coconut butter {melted}, pink salt, pumpkin pie spice, maple sugar, & pure vanilla in a bowl.
2. Poor the kernel mixture into a microwavable safe silicone bowl and pop bowl for 3 minutes.
3. Melt the 1tbs of coconut butter & drizzle on top
4. Add a dash of pink salt and a few more dashes of pumpkin pie spice.
