Matcha Pumpkin Spice Smoothie {gf,v,rsf}

How many pumpkin smoothie recipes is too many? If you said their are never too many, you're right. This is number three, and I don't plan on stopping yet. I mean, I love pumpkin spice, I love matcha, and I love smoothies, so this combo just sounded like a no brainer. However, as we get further away from summer, I'm suddenly not craving super fruity smoothies, such as mango, strawberry, raspberry, pineapple, etc. So, for this recipe I used a mix of banana and steamed, then frozen cauliflower to get the perfect, creamy smoothie base. Other nutrient dense ingredients include: rolled oats, matcha almond butter, dates, pumpkin pie spice, dairy free cashewgurt, spinach, and more. This smoothie is packed with veggies, antioxidants, plant based protein, healthy fats, and complex carbs. Not only does it taste good, but it also makes for a well balanced, filling meal. I can’t explain the sweet flavor the matcha and pumpkin spice make together; I guess you’ll have to find out for yourself!

 
 

RECIPE

Prep time: 5 minutes

Serving size: 1


INGREDIENTS

1/2 frozen banana

1/2c steamed, then frozen cauliflower

1 date

1tbs almond butter

1tbs rolled oats

2 handfuls spinach

1/4c plain dairy free yogurt

1tsp matcha

1tsp pumpkin pie spice

1tsp cinnamon

coconut water to taste


METHOD

1. Add all ingredients to a blender, add in your desired liquid amount, and blend. Add more liquid for a smoothie, or use less and add your own toppings for a bowl!
