Not sure what to do with yogurt before it goes bad? Holiday inspired bark is the answer. This peppermint chip yogurt bark is the perfect, light snack or dessert. I mean, peppermint is one of the best holiday flavors, am I right? This bark is packed with dairy free unsweetened yogurt, collagen, pure peppermint extract, Hu Kitchen chocolate gems, pure maple syrup, spirulina powder, cacao nibs, and of course, crushed peppermint candy. It's such an easy, healthy addition to your holiday season- gluten free, vegan, dairy free, you name it!
RECIPE
Prep time: 5 minutes
Freeze time: 2-3 hours
INGREDIENTS
1c dairy free yogurt {I use Forager Unsweetened Plain}
1 scoop Vital Proteins vanilla collagen {sub vanilla protein}
1/4tsp peppermint extract
1tsp spirulina powder
1tbs pure maple syrup
1tbs cacao nibs
1tbs crushed peppermint candy
sprinkle of pink salt
METHOD
1. Prep a baking sheet with parchment paper or baking mat.
2. In a medium bowl, mix all wet ingredients + collagen.
3. Once smooth, fold in half of the crushed peppermint, cacao nibs, and chocolate gems.
4. Pour over your prepped baking sheet and spread evenly to your desired thickness.
5. Once even, sprinkle the other half of the toppings on top and sprinkle with a little pink salt.
6. Freeze for 2 to 3 hours or until solid.
7. Remove from freezer, break apart, and serve.
8. Store in freezer in a sealed container.
