Peanut Butter Cacao Trail Mix Granola {gf,v}

Another granola recipe in the books! This granola recipe is for all my peanut butter lovers; its packed with peanut powder, peanut butter, raw cacao powder, and all your trail mix goodies, such as nuts, seeds, cacao nibs, oats, unsweetened coconut, and more! However, one of my favorite add ins is Trader Joe's gluten free mini pretzels. These mini pretzels truly make this granola the perfect sweet and salty snack or addition to any breakfast. The combination of the peanut butter and homemade chocolate drizzle is just right! All you do is blend up the bulk of ingredients, drizzle with chocolate, and you're all set. I love adding this to a yogurt bowl or on top of acai bowls; it's the best! Plus, its vegan, gluten free, and refined sugar free.

 
 

RECIPE

Prep time: 7 minutes

Bake time: 26 minutes

Serving size: 8


INGREDIENTS

1c gluten free rolled oats

1/4c walnuts

1tbs peanut powder {I find mine at Trader Joe's}

3tbs peanut butter

2tbs chia seeds + hemp seeds

3tbs flaxseed meal

1/4c unsweetened coconut flakes

2tbs pure maple syrup

1c Trader Joe's gluten free mini pretzels

1tbs cacao nibs

1/2tsp cinnamon

1tbs melted coconut oil + 2tbs raw cacao powder for drizzle

Sprinkle of coarse pink salt


METHOD

1. Preheat oven to 325 F, and line a baking sheet with parchment paper.

2. Add all ingredients to a blender, besides coconut oil and raw cacao powder.

3. Pulse a few times until everything is broken up and chunky.

4. Transfer to baking sheet and press down into one large, flat sheet.

5. Make the cacao drizzle by melting 1tbs coconut oil and mixing that will 2tbs cacao powder.

6. Drizzle on top of granola sheet, sprinkle with pink salt, and bake for 25-27 minutes or until golden brown on top.

7. Let cool for 15 minutes before breaking apart into clusters.
