Let me just say— it’s a good day to be alive! These nutter butter granola bars are my new obsession. I am absolotely positive that every peanut butter fan will fall in love with these; they seriously taste identical to the classic nutter butter cookies from all of our childhood. Except, these are packed with minimal, nutrient dense ingredients. These ingredients include: rolled oats, almonds, vanilla, peanut butter, pure maple syrup, dates, coconut flour, coconut oil, maca powder, seeds, almond milk, and pink salt. The flavor is amazing, the ingredients are full of great benefits, and they take no time at all to make! Plus, they’re gluten free, vegan, and refined sugar free. What’s not to love?
RECIPE
Prep time: 5 minutes
Total time: 25 minutes
INGREDIENTS
2c gluten free rolled oats
1/2c pitted dates
2tbs coconut flour
1/2c creamy peanut butter
1/2c almonds
1tbs chia seeds & hemp seeds
1tsp maca powder {optional}
1tsp vanilla
1/4c honey or maple syrup
2tbs unsweetened almond milk
a few scoops of collagen or protein {optional}
1/3c melted coconut oil
pink salt to taste
METHOD
1. Line a baking sheet or dish with parchment paper or silicone mat.
2. Add all ingredients to a food processor and blend until starting to clump up.
3. Pour onto prepped baking sheet or dish, spread, and press down until compact.
4. Press down forming a large rectangle shape with the mixture about 1/2inch thick. Use your hands or spatula to straighten the sides evenly.
5. Once in one compact rectangle shape, transfer to the freezer for 15-20 minutes to firm.
6. Remove from freezer and slice into granola bar size pieces. I made 16 bars.
7. Store in fridge & enjoy!
