Vegan Maple Sweet Potato Date Waffles {gf, v, rsf}

Sunday brunch just got 10x better. These sweet potato waffles are packed with heathy carbs, the perfect touch of maple, and just the right level of sweetness. They are naturally sweetened with pure maple syrup and pitted dates. Other nutrient dense ingredients in this recipe include; flaxseed meal, cassava flour, vanilla collagen, cinnamon, maca powder, and unsweetened almond milk. Pair these with a mug of hot tea and a hefty drizzle of pure maple syrup, and you’re breakfast or brunch is sure to satisfy. These waffles are for all to enjoy; gluten free, vegan, and refined sugar free!


 
 

RECIPE

Prep time: 5 minutes

Total time: 15 minutes


INGREDIENTS

1 large cooked sweet potato

1/4c cassava flour

1tbs flaxseed meal

1tsp maca powder

1 scoop vanilla collagen {sub 1tsp vanilla} 3tbs pure maple syrup

1tsp cinnamon

1/4c unsweetened almond milk

1/4c chopped dates

sprinkle of pink salt


METHOD

1. Preheat mini waffle maker and spray with coconut oil.

2. Cook sweet potato if not already (I microwave for 4 minutes for this recipe).

3. Add all ingredients to a large bowl and whisk until smooth (batter will be pretty thick).

4. Transfer batter to waffle maker and cook until crispy

5. Repeat until all batter is used up (should be about 4 mini waffles).

6. Plate your waffles, add your favorite toppings, and enjoy!
