Maple Caramel Blueberry Skillet Granola {gf,v}

It's a new day, and a new, bomb a$$ granola recipe is comin' right at ya, maple caramel blueberry style! I've decided that granola recipe development is one of my new hobbies, and it might be one of the best things to happen to me {and you}. This recipe is filled with juicy, fresh organic blueberries, hearty oats and nuts, my favorite nut butter to exist: Georgia Grinders maple caramel almond butter, and many other nutrient dense goods! There's so much healthy goodness packed in this recipe, and it pairs well with your everyday yogurt, fresh smoothie bowls, morning cereal, or times for snackin'.


 
 

RECIPE

Prep time: 3 minutes

Cook time: 7 minutes

Serving size: 8


INGREDIENTS

1tbs coconut oil

1/2c each: almonds & walnuts

1 1/2c gluten free rolled oats

1/2c unsweetened coconut flakes

3tbs flaxseed meal

1tbs each: hemp seeds & chia seeds

1tbs pure maple syrup

5 pitted dates

1/2c organic blueberries {sub dried blueberries}

1/2tsp cinnamon

1/2tsp pure vanilla

Sprinkle of pink salt


METHOD

1. If nuts are not pre-chopped or sliced, add to food processor and pulse until mostly broken up. {I like to leave some chunks and some broken up small}

2. At the same time, chop dates into small pieces {same size as chopped nuts}.

3. Heat a large skillet on low-medium heat with the coconut oil.

4. Add in all dry ingredients: {nuts, oats, coconut flakes, seeds, dates, cinnamon, salt, flaxmeal} and stir/toss for 3-5 minutes.

5. Cook until starting to crisp, then add in the almond butter, vanilla, and maple syrup.

6. Add blueberries to a microwave safe dish, and heat for 20 seconds.

7. Using a fork, press down on the blueberries to flatten/break them up {they should be juicy}

8. Add blueberries to skillet, and mix well for an additional 4 minutes. Flip/stir often to prevent burning.

9. Remove from heat, and allow to cool for 10 minutes before serving or storing in an air tight container or mason jar!
