Let me just start by saying- this sweet potato bread will steal your heart, as it already did mine. It's a mouth full, but it's the best mouth full you'll ever have. It's perfectly moist, the spice flavor is so cozy, and it's super easy to make! Lightly sweetened with maple syrup and nature's candy: blueberries, this is the perfect slice for breakfast or to satisfy your sweet tooth in the afternoon. Not to mention, it's packed with fiber, complex carbs, healthy fats, with a ton of wholesome ingredients, such as organic sweet potatoes, flaxseed meal, cinnamon, and no salt almond butter. Just like a lot of my other recipes, you just throw everything in a food processor and let it do it's magic for this batter. I also threw some hearty nuts and pumpkin seeds on top for a little crunch factor. This recipe is gluten free and vegan, so set your oven- it's time to get baking!
