Life Changing Oats N’ Nuts Granola {gf,v}

Comin' at you on this fine Thursday morning with another new granola recipe! Forget everything I have ever said- this one is my fave. This granola is the chunkiest granola ever, and I love all the clumps of chopped nuts. Unlike a lot of my granola recipes, this recipe does not require a blender; I honestly love making granola both ways. In this recipe, you'll find a mix of oats and nuts, another with many other wholesome ingredients. It features: walnuts, almonds, gluten free rolled oats, pure maple syrup, pitted dates, Georgia Grinder's pecan butter, unsweetened coconut flakes, hemp seeds, and more. It's loaded with superfoods! I find that it pairs well with everything because the flavor is very versatile and classic. As always, it is gluten free and vegan!

 
 

RECIPE

Prep time: 5 minutes

Bake time: 25 minutes

Serving size: 8


INGREDIENTS

1c gluten free rolled oats

1/2c each: chopped almonds + walnuts

2tbs pure maple syrup or date nectar

3tbs melted coconut oil

1/4c unsweetened coconut flakes

2tbs Georgia Grinder's pecan butter

1tbs each: hemp seeds + chia seeds

1/4c flaxseed meal

1/4c chopped dates

1tsp pure vanilla

1/2tsp cinnamon


METHOD

1. Preheat oven to 325 F, and line a baking sheet with parchment paper.

2. Chop nuts and dates if not already pre chopped, and add to a large bowl.

3. Add in the remainder of the ingredients and mix well.

4. Transfer to the prepped baking sheet and press down into one large sheet of granola.

5. Sprinkle extra coconut flakes and pink salt on top, and press down again. You want it to be very stuck together.

6. Transfer to oven and bake for about 25 minutes or until golden brown.

7. Remove from oven and let cool for 20 minutes before breaking apart. {Optional to throw in the freezer for 5-10 minutes to harden more}

8. Once cooled, break apart into granola clusters and store in an air tight jar.
