Who says you’ve gotta go to the Apple orchard to get your Apple cider donut fix? These easy, life changing Apple cider donuts are bursting with flavor, and include some more nutrient dense swaps to classic Apple cider donut ingredients. This includes: gluten free flour, maple syrup, coconut sugar, apples only apple cider, and more! They’ve got the perfect balance of apple fruitiness, fall spices, and sugary sweetness from the cinnamon sugar mixture. Plus, these babies are done in under 20 minutes; no frying necessary either. It doesn’t get much easier than that! These are dairy free, gluten free, and refined sugar free, so they’re something for almost everyone!
RECIPE Prep time: 7 minutes
Cook time: 16-18 minutes
Serving size: 18 donuts
INGREDIENTS
2c gluten free flour
1 egg
3/4c apple cider
2tbs pure maple syrup
1/3c + 1tbs coconut sugar
1/4c coconut butter melted
1tsp vanilla
1tbs cinnamon
1/2tsp nutmeg
1tsp baking powder
1/4tsp baking soda
sprinkle of pink salt
Cinnamon Sugar Coating
3tbs coconut butter {melted by itself}
1/4c coconut sugar
1tbs cinnamon
METHOD
1. Preheat oven roasted 350° F, and coat donut tray with avocado or coconut oil. 2. In a large bowl, add in all wet ingredients to whisk {egg, maple syrup, vanilla, apple cider, coconut butter}. 3. Once whisked, fold in the remainder of the dry ingredients. Mix until smooth
4. Once smooth, transfer to the prepped donut tray, only feeling each hole up half way to leave room for rising. 5. Once all batter is used up, bake for 14-16 minutes.
6. While the donuts bake, make the cinnamon sugar mixture in a shallow bowl.
7. Also melt the coconut butter in a small bowl for 20 seconds in the movrowave.
8. Remove donuts from oven and let cool for 5 minutes.
9. Once cooled, brush eat donut with a little coconut butter, then dip into the cinnamon sugar mixture until fully coated.
10. Repeat for all donuts, and enjoy!
