As I've grown older, I've grown to love the more simple dressings for my salads. I used to soak my salads with heavy dressings, such as Caeser. Let's just say, that kind of stuff doesn't agree with me anymore. I feel like the more simple the dressing, the more fresh the salad. I felt inclined to develop this dressing after getting a dressing similar to this out at my local diner. I don't know exactly what was in their dressing, but I created what 'Tomato Basil' tastes like in my mind. This recipe is fairly simple and includes wonderful ingredients, such as apple cider vinegar. Lastly, I have made this dressing completely vegan and gluten free, with no added sugar!
RECIPE
Prep time: 5 minutes
Serving size: 6
INGREDIENTS
1/2c heirloom tomatoes
1/4c fresh basil
1/4c olive oil
2 gloves minced garlic
Juice from 1/2 lemon
1tbs apple cider vinegar
2tbs red wine vinegar
1tbs balsamic vinegar
2tbs nutritional yeast
Pink salt, black pepper, red pepper flakes {to taste}
METHOD
1. Chop mini heirloom tomatoes.
2. Add all ingredients to a food processor and blend, leaving some tomato chunky.
3. Transfer to a dressing bottle or closed container and store in fridge.
