Healthy Raw Samoas Bars {gf, v}

What will we do without girl scout troop 251 sitting outside the local Stewart's with cookies? Oh thats right- make my no bake raw Samoas bars! These babies taste just like the real deal, without the crap; that's right, no refined sugars or flours, dairy, or sneaky ingredients. Plus, they're 100% gluten free! Also, you don't have to leave your house to get them {not that you really have the option}. The flavor in these is incredible, filled with decadent toasted coconut flakes, a smooth chocolate drizzle, and a gooey homemade caramel center. Not to mention, they require no bake time, so you can't really mess these up! Did I mention they are three layer too? Throw these beauties in the freezer, and you're good to go with three layer goodness!

 
 

Prep time: 10 minutes

Freeze time: 5+ hours

Makes: 16 bars

INGREDIENTS

Base Layer:

3/4c gluten free steel cut oats

1tbs pure maple syrup

2tbs almond butter

10 soft pitted dates

3/4c mixed nuts {I used almonds and walnuts}

2tbs unsweetened coconut flakes

1tbs coconut oil

Splash of pure vanilla

Sprinkle of pink salt

Caramel Layer:

1/4c creamy almond butter

1tbs pure maple syrup

2tbs coconut oil

2tsp maca powder

Top Layer:

1c unsweetened coconut flakes

1/4c dark chocolate {I use 1/2 a Hu Kitchen chocolate bar}

1tbs coconut oil

Sprinkle of pink salt


METHOD

1. Prep a square dish with parchment paper.

2. Add all base layer ingredients to a food processor and blend until well combined and smooth.

3. Transfer that layer to the lined dish and place in the freezer for 10 minutes.

4. While that freezes, make the caramel.

5. Heat the coconut oil in a small sauce pan over medium heat, and add in the almond butter, maple syrup, and maca powder.

6. Stir until well combined, then remove the frozen base from the freezer and pour on top.

7. Spread the caramel evenly on top, and place back in the freezer for 5 minutes.

8. While that freezes, melt the chocolate. You can either microwave the coconut oil and chocolate or add it to the same sauce pan until well combined and melted.

9. At the same time, toast the coconut flakes with 1tsp coconut oil in a skillet on medium-low. Toss often and watch closely because they crisp quickly.

10. Remove the 2 layer bars from the freezer and add the toasted coconut flakes on top.

11. Once the bars are covered with coconut, drizzle the chocolate sauce on top.

12. Place in the freezer for at least 5 hours to fully freeze.

13. After 5 hours, remove from the freezer and enjoy! Keep in freezer for best results.
