Fluffy Blueberry Oat Banana Bread {df, rsf}

Oh lord, where do I even start? This bread is next level and loaded with mouth watering flavor. I’ve been doing a ton of blueberry picking, so I figured this was a great way to make use of some. I typically stick to gluten free baking, but I love baking with whole wheat flour; it’s perfect for banana bread. This bread is loaded with more nutrient dense ingredients, such as flaxseed meal, coconut sugar, almond butter, cinnamon, oats, whole wheat flour, bananas, juicy blueberries, and more. Not only is this bread super fluffy and perfectly sweet, but I also included a alight crumble on top for texture. As long as you’ve got an hour to spare, you’re all set! There's nothing better.


 
 

RECIPE

Prep time: 5 minutes

Bake time: 50-55 minutes

Serving size: 12


INGREDIENTS⁣⁣

Wet:⁣⁣

2 mashed bananas⁣⁣

1 egg

2tbs @georgiagrinders creamy almond butter ⁣⁣

3tbs coconut oil melted

1/2tsp pure vanilla⁣⁣

3tbs pure maple syrup + 3tbs coconut sugar⁣⁣

Dry:⁣⁣

1 3/4c whole wheat baking flour {sub gf flour}⁣⁣

3tbs flaxseed meal⁣⁣

2tsp cinnamon ⁣

1/2tsp baking soda ⁣⁣

1/2tsp baking powder⁣⁣

Sprinkle of pink himalayan pink salt⁣⁣

1/4c fresh blueberries


Topping:

1tbs hemp seeds

1/4c rolled oats

1tbs coconut sugar

sprinkle of cinnamon

extra blueberries ⁣⁣

METHOD

1.⁣⁣ Preheat oven to 350F and line a loaf dish with parchment paper.

2. In a large bowl mash the banana, add in all wet ingredients, and whisk.

3. Fold in the flour, and the rest of the dry ingredients, and mix until well combined.

4. Fold in blueberries evenly to batter.

5. Transfer to prepped loaf dish and sprinkle with pink salt.

6. Bake for 50-55 minutes or until tooth pick comes out clean. Let cool for at least 15 minutes before enjoying!
