Fajita Chicken Burgers with Sweet Potato Waffle Bun {gf,df}

The temperature has been rising, and you know what that means: burger season! Not sure about you, but I love a good burger, sweet potato fries, and maybe a little corn on the cob for a spring/summertime dinner on the deck. This is what these chicken burgers remind me of! These juicy chicken burgers are packed with nutrient dense ingredients, such as organic ground chicken, organic spinach, freshly chopped onion and pepper, and tasty spices. For this recipe, I use one of my favorite Trader Joe's seasonings: 21 Seasoning Salute for that "fajita" flavor, but I will leave substitutions below. I pair mine with my newest love: sweet potato waffle "buns." It's such a fun and light way to enjoy your favorite burger! I also love throwing these burgers on top of my favorite greens; long story short, these burgers are super simple, and there are so many ways to enjoy them.


 
 

RECIPE

Prep time: 10 minutes

Cook time: 8 minutes

Serving size: 5


INGREDIENTS

Chicken Burgers:

1tbs avocado oil

1 lb ground chicken

2c spinach

1/2 bell pepper

1tbs nutritional yeast

1/4 onion

1tsp garlic powder

1tsp Trader Joe's 21 Seasoning Salute*

1/2tsp dried cilantro

Pink salt & black pepper to taste


Waffles:

4 medium sweet potato

3tbs nutritional yeast

2tbs tahini

2tbs potato starch

Pink salt, pepper, garlic powder, red chili flakes


METHOD

1. Coat a large skillet with avocado oil, and set aside.

2. Diced bell pepper and onion, and add to a large bowl with the ground chicken.

3. Add spinach to a food processor and pulse until finely chopped.

4. Add the spinach, garlic powder, 21 Seasoning Salute, and cilantro to the bowl.

5. Mix well, then start to form burger patties. {Should make about 5}

6. Heat the already greased skillet and add the patties.

7. Cook for 5-7 minutes on each side.

8. While the burgers cook, make the sweet potato waffles.

9. Heat your waffle maker with a little avocado oil, then poke holes in sweet potato, and microwave for 3-4 minutes depending on how thick.

10. Add sweet potato, tahini, potato starch, nutritional yeast, and spices to blender and blend until smooth.

11. Add sweet potato batter to greased waffle maker and cook until done. Repeat for all the batter.

12. Once burgers are done, remove from heat and plate with fresh romaine, sliced tomato and your sweet potato waffle buns!


*Sub a mix of Italian seasoning, cayenne pepper, oregano, and parsley
