Eggplant & Zucchini Lasagna Bake {gf, lf}

Time to elevate your family Sunday dinner! I've made this lasagna a few times now, and my family loves it. They're big cheese and meat people, but they loved the flavor in this dish. This recipe is gluten free and lactose free, but you can sub a entirely dairy free cheese to make it completely vegan. I love this recipe because it's loaded with veggies, but still has some gluten free lasagna mixed in for a goof balance. I promise this won't fall short on flavor!

Cook time: 3o minutes

Total time: 55 minutes

1 large eggplant⁣ 1 large zucchini 1 jar of organic crushed tomatoes tomato basil sauce ⁣ 2c baby spinach ⁣ 1c @traderjoes lactose free almond shreds⁣ 1 box Tinkyada gluten free lasagna⁣ 1/2c nutritional yeast 1/4c fresh basil ⁣ 1/2tsp garlic powder

pink salt, black pepper, red chili flakes ⁣{to taste}


1. Preheat oven to 425° & prep a baking sheet with parchment paper or olive oil.

2. Slice zucchini & eggplant, and place in a large bowl with olive oil, black pepper, garlic powder, & pink salt.

3. Transfer to baking sheet, & and bake for 15-20 minutes, or until crispy on the edges.

4. Bring a large pot to boil, cook the lasagna until cooked, but still a bit firm.

5. Once both are done, start the layering in a square or rectangular lasagna dish.

6. Start with a layer of sauce on the bottom, then add some of the lasagna in strips.

7. Then add some of the spinach, eggplant, & zucchini on top.

8. Add another layer of sauce, and sprinkle on some of the shredded cheese, and the nutritional yeast.

9. Add a sprinkle of garlic powder, fresh basil, & pink salt.

10. Repeat 2-3 more time using the rest of the ingredients. The top layer should be the tomato sauce and cheese blend.

11. Bring the oven down to 400and bake for 30 minutes. Put on high broil for 2 minutes before taking it out, but watch closely as times may differ.

12. Finish with fresh basil, & and serve with a toasty slice of bread {if desired}!
