Cranberry Chocolate Chunk Banana Bread {gf,df}

Oh yes, oatmeal cranberry is in. I love trail mix with cranberries and dark chocolate, so that was my inspiration behind his bread. This banana bread is everything, from the fruity sweetness of the cranberry to the rich sweetness of the dark chocolate. Oh, and you can't forget about that banana flavor. I also used some of the batter to make cookies, & they taste like a handful of banana trail mix! This recipe uses two of my favorite flours: oat flour and almond, and it is lightly sweetened with raw honey. A warm slice of this bread is bound to make your day!
RECIPE
Prep time: 7 minutes
Bake time: 40 minutes
Serving size: 8
INGREDIENTS
2 mashed bananas 1c almond flour 1/3c oat flour 2 free range eggs 1/4c coconut butter 3tbs almond butter 1tsp vanilla 1/3c raw honey 1/4c flaxseed meal 1tbs chia seeds 2tbs unsweetened oat milk 1/4c dark chocolate chunks {I use Enjoy Life Foods} 1/4c dried cranberries Pinch of pink salt
METHOD
1. Preheat oven to 350° and line a loaf tin with parchment paper.
2. Add all wet ingredients to a bowl & mix.
3. In a separate bowl, mix dry ingredients.
4. Add together and mix well.
5. Fold in cranberries & dark chocolate chunks and stir evenly.
6. Transfer to loaf tin and top with additional cranberries and chocolate chunks.
7. Bake for 40 mins. {If making into cookies, scoop, roll into balls, press down, & bake for 15 mins}
8. Remove from oven and let cool for 20 minutes before slicing.
