Copycat Reese's Eggs {gf,v}

Easter is not complete without Reese's Eggs, am I right?! However, I'm living by the motto: "eat Reese's eggs, but make it healthy." These eggs are gluten free, dairy free, and refines sugar free, but taste exactly like the real deal. Not to mention, they are low calorie {for those who care}, because this recipe uses peanut powder, rather than peanut butter. With out current situation right now, I don't have time to be running out of peanut butter, so I figured peanut powder was a win win situation. These are the perfect treat to satisfy your sweet tooth, and it only requires about 6 simple ingredients!

 
 

RECIPE

Prep time: 45 minutes

Makes: 14 eggs


INGREDIENTS

4tbs peanut powder + 2tbs water

2tbs flaxseed meal

1/2tsp vanilla

3tbs almond flour

2tbs raw honey

3/4c dairy free dark chocolate

1tsp coconut butter

Sprinkle of pink salt


METHOD

1. Line a tray with parchment paper.

2. In a small bowl, mix the peanut powder and water until well combined {it should resemble a smooth and creamy PB}.

3. Add in the rest of the ingredients and mix until doughy, but still a little sticky.

4. Transfer the bowl to freezer for 5 minutes.

5. Remove from freezer and start to scoop into mini eggs. Lay them evenly on the parchment paper and place back into the freezer for 15 minutes.

6. While they freeze, melt chocolate with coconut butter in a small bowl.

7. Remove eggs from freezer and dunk in chocolate, until whole egg is covered.

8. Lay evenly on parchment paper, sprinkle with a little coarse pink salt, and place back into freezer for 20 minutes. {add an extra chocolate drizzle on top of desired}

9. Remove from freezer, sprinkle with a little peanut powder & enjoy!
