Cookie Crisps Cereal {gf,v,rsf}

Yes, you read that title right... cookie crisps are back in style. However, these cookie crisps require minimal ingredients and use more wholesome ingredients than the classics from the store. I mean, "cookie crisps, but make them more nutrient dense," right? For this recipe, I used my classic chocolate chip cookie recipe with a few alterations. There is no long list of ingredients for this one- it requires 6 main ingredients. This recipe includes more nutrient dense baking options, such as flaxseed meal, almond flour, pure maple syrup, coconut sugar, unrefined coconut oil, and pure madagascar vanilla. Plus, these little bites of joy are prepared and ready for eating in under 15 minutes. Throw these in a bowl with your favorite nut milk, and you'll never turn back; thank me later. Unlike the store bought Cookie Crisps, these are vegan, gluten free, and refined sugar free!

 
 

RECIPE

Prep time: 5 minutes

Bake time: 10 minutes

Makes: 40 cookie crisps


INGREDIENTS

3/4c almond flour

1tbs melted coconut oil

1tbs pure maple syrup + 1tbs coconut sugar

2tbs flaxseed meal

1/2tsp baking soda

1/4c mini dairy free dark chocolate chips

1/2tsp pure vanilla

Sprinkle pink salt


METHOD

1. Preheat oven to 350 F, and line a baking sheet with parchment paper.

2. Add all ingredients to a medium bowl, besides chocolate chips and mix.

3. Fold in chocolate chips and add a sprinkle of pink salt.

4. Roll cookie dough into small balls {about the size of a marble}

5. Lay evenly on a baking sheet and bake for 10 minutes.

6. Let cool for 10 minutes and serve with your favorite nut milk.
