Chocolate Covered Strawberry Freezer Bars {gf,v,rsf}

Introducing your new, go to Valentine's Day inspired treat! These no bake bars are the perfect balance of chocolate and strawberry; each bite is like a heavenly, chocolate covered strawberry. It starts with the homemade chocolate crust, than the simple strawberry filling, and a swirl of ooey gooey chocolate on top. All ingredients are gluten free, vegan, and refines sugar free. These ingredients include: gluten free oats, cacao powder, cashew butter, coconut oil, unsweetened oat milk, pure maple syrup, pure vanilla, maca powder, strawberries, and more. Keep these babies in the freezer, for a delicious snack or dessert any time you please!



Prep time: 25 minutes

Freeze time: 1-2 hours


Chocolate Base Layer:

1 1 /2c gluten free oats

3tbs cacao powder

1 scoop chocolate protein {sub additional cacao]

1tsp maca powder

1tsp vanilla

2tbs cashew butter

3tbs pure maple syrup

2tbs unsweetened oat milk

1/3c melted coconut oil

Strawberry Jam Layer:

2c strawberries {fresh or frozen}

1tbs pure maple syrup

Chocolate Swirl Layer:

3/4c dairy free chocolate

1/2tbs coconut oil

flakey sea salt

cacao nibs and goji berries to top {optional}


1. Line square dish with parchment paper.

2. In a food processor, blend all base ingredients. Transfer to prepped dish, and press down until firm.

3. Place in freezer while you make the strawberry jam.

4. Heat strawberries on the stove top over medium/low heat. Mix and mash until broken down.

5. Once all large chunks are gone, remove from heat and add in maple syrup.

6. Add the jam layer on top of base layer and freeze for 15 minutes.

7. Meanwhile, melt the chocolate.

8. Remove bars from freezer & drizzle the chocolate overtop. The strawberry layer will not be frozen, so marble the chocolate with the jam.

9. Top it off with cacao nibs, goji berries, and flakey sea salt. Place in the freezer for 1 hour.

10. Remove, slice, and enjoy!
