Chewy Chocolate Chip Cookies {gf/df}

After running @wellnesswithmak for over a year now, and having developed over 60 recipes, I suddenly realized that a basic chocolate chip cookie recipe was not one of them. Clearly, I found this to be an urgent problem, and threw these bad boys together overnight. I mean, who doesn't love OG chocolate chip cookies? Personally, I'm a crispy on the outside, chewy on the inside kinda girl, and these hit the spot! They are the perfect size to satisfy a sweet tooth, and the combination of soft & chewy is just right. This recipe takes less than 30 minutes to make, and as always, these are gluten free, refined sugar free, dairy free, and can easily be made vegan.


 
 

RECIPE

Prep time: 10 minutes

Bake time: 12-14 minutes

Makes: 10-12 cookies


INGREDIENTS

1 3/4c almond flour ⁣⁣ ⁣⁣ 1 egg ⁣⁣(sub chia egg) ⁣⁣ 2tbs pure maple syrup

1/4c coconut sugar 1 1/2tsp vanilla ⁣⁣⁣⁣ 1/2tsp baking soda ⁣ 1/4c coconut oil (partially melted) ⁣⁣ 2tbs creamy almond butter ⁣⁣ 1/2c dairy free dark chocolate chips (I like Hu Kitchen chocolate bars) Pinch of pink salt (in batter + on top) ⁣⁣


METHOD

1. Preheat oven to 350° & line a baking sheet with parchment paper.

2. In a large bowl, whisk wet ingredients {egg, coconut oil + butter, maple syrup, date nectar, vanilla, almond butter}.

3. In a separate bowl, mix the rest of the dry ingredients {besides the chocolate chips}.

4. Fold the dry ingredients into the wet.

5. Mix until well combined, and fold in dark chocolate.

6. Sprinkle coarse pink salt in the batter.

7. Use a cookie scoop to form the dough balls & place evenly separated on the parchment paper.

8. Finish with another sprinkle of pink salt on top and bake for 12-14 mins.

9. Let cool for 10 minutes.
