As the title states, this is the best ever grain free granola- I promise! It's loaded with lots of hearty nuts, superfood powders, natural sweetness, and other nutrient dense mix ins. This granola has a vanilla cinnamon flavor with a hint of caramel from the maca powder. It's the easiest granola to make, and it only takes 20 minutes to bake. Not to mention, it is sooo chunky. Sprinkle this over smoothies, yogurt, and oatmeal or pour some nut milk over top for the perfect breakfast or snack. This recipe is naturally sweetened with pure maple syrup and chopped dates, and it is gluten free, vegan, and refined sugar free!
RECIPE
Prep time: 5 minutes
Bake time: 18-20 minutes
INGREDIENTS
1/2c each: chopped almonds, cashews, walnuts, pecans
1/4c unsweetened coconut flakes
1tbs chia seeds
1tbs hemp seeds
2tbs flaxseed meal
1/4c pepitas
1/4c pure maple syrup
3tbs melted coconut oil
1/4c chopped pitted dates
2tbs cashew butter
1tsp maca powder
1tsp vanilla
1tsp cinnamon
2 scoops collagen {optional}
METHOD
1. Preheat oven to 350 F and line a baking sheet with parchment or baking mat.
2. Add all ingredients besides the chopped dates to a large bowl and mix well.
3. Once evenly mixed, transfer mix to prepped baking sheet and spread evenly.
4. Press down on the granola to create one large, solid sheet.
5. Give it an extra sprinkle of pink salt and bake for 18-20 minutes.
6. While the granola bakes, chop your dates.
7. Once done baking, remove granola from oven and add the chopped dates on top.
8. Then transfer the baking sheet into the freezer for about 15 minutes to cool and harden.
9. Remove the granola from the freezer and break into your desired clusters. Enjoy!
