Are you ready to meet the chunkiest granola ever? Better be because this is it! Granola is one of those foods that never gets old, and it comes in handy for so many things. I love making my own granola because it doesn't break the bank, and I know there are no sneaky ingredients thrown in. This granola is full of nutrient-dense, delicious ingredients, such as fresh banana, creamy almond butter, hearty oats, crunchy walnuts, spices, and much more. This is one of my new fave recipes because it tastes just like a slice of banana bread! It's also super simple to make, and it only requires a blender or food processor. This way of making homemade granola is not only easy and fast, but it gives the granola the perfect crunch. Prep time is only 5 minutes or less and bake time is only about 25 minutes! What more could you ask for? Not to mention, this is gluten free and vegan friendly.
RECIPE
Prep time: 5 minutes
Bake time: 25 minutes
Serving size: 8
INGREDIENTS
1c oats
1 banana
1/2c walnuts
1/4c almonds
1tbs maple syrup
6 dates
2tbs flaxseed meal
2tbs almond butter
1tsp maca powder
1/2tsp vanilla
1tsp cinnamon
METHOD
1. Preheat oven to 350° and line baking sheet with parchment paper.
2. Add all ingredients to a food processor & blend until roughly chopped & clumped together.
3. Pour onto lined baking sheet & spread evenly, pressing down with a spatula forming one big sheet. {it will be clumpy and sticky, but trust me it will crisp up}
4. Bake for 25-27 mins or until golden brown.
5. Let cool for at least 20 mins. Once cooled, [it should be one solid sheet of granola] break apart to your desired granola chunks & enjoy!
