10 minute Grain free Skillet Granola {gf,v}

Let me just start off by saying- I'm never making granola in the oven ever again {ik, bold statement}. 10 minute, one skillet granola is where it's at!! This recipe is so simple, and cooking the granola on the stovetop adds the perfect crispiness and crunch factor. In this recipe, you'll find a variety of nuts, coconut flakes, natural sweeteners, and superfoods, such as matcha {which is optional} and goji berries. The goji berries add a nice splash of frutiness, and act as a great antioxidant. This granola is so versatile; I love serving it on top of yogurt or with a sprinkle to top off a smoothie. This is such a great grain free granola options that's done in no time!


 
 

RECIPE

Prep time: 3 minutes

Cook time: 7 minutes

Serving size: 6


INGREDIENTS

1tbs coconut oil

1/2c each: pecans, almonds, walnuts

1/2c unsweetened coconut flakes

2tbs flaxseed meal + 2tbs flaxseeds

1tbs each: chia seeds, hemp seeds

1/4tsp matcha powder {optional}

10 pitted dates

2tbs goji berries

2tbs creamy almond butter

1/2tsp cinnamon

2tbs raw honey

1tsp date nectar

Sprinkle of pink salt


RECIPE

1. If nuts are not pre-chopped or sliced, add to food processor and pulse until mostly broken up. {I like to leave some large and some broken up small}

2. Also chop dates into small pieces {same size as chopped nuts}.

3. Heat a large skillet on low-medium heat with coconut oil.

4. Add in all dry ingredients; {nuts, coconut flakes, seeds, dates, cinnamon, matcha powder, salt, flaxmeal, goji berries} and stir/toss for 3-5 minutes.

5. Cook until starting to crisp, then add in the honey, almond butter, and date nectar.

6. Mix well for an additional 4 minutes and flip/stir often to prevent from burning.

7. Remove from heat, and allow to cool for 10 minutes before serving or storing in an air tight container or mason jar.
